In February 2013, Breadshare conducted a Scottish Borders LEADER funded project to look at the feasibility of establishing a collaborative supply chain for using organic Scottish wheat for bread making in our bakery and others; and also as a product for the home consumer. The project collaborated with producers, millers and potential wholesalers and retailers to contribute their knowledge and skills with setting up a supply chain for Scottish flour.
The aims of the project are:
The project has four stages :
Breadmatters has commenced a longer-term project, Scotland The Bread, which is complementary to and supports the objectives of Breadshare's organic wheat supply chain feasibility project. That project aims to rebuild a home-grown grain economy, creating an unbroken chain of healthy nourishment from soil to citizen. It will evaluate cereal varieties old and new, stimulate research and connect farmers, millers, bakers, traders, public health practitioners, caterers and home users in new relationships. The goal is to develop a locally-controlled, collaborative, inclusive and sustainable supply of resilient Scottish wheat and healthier bread for everyone.
For further information, see the Breadmatters website.
The final feasibility report was delivered in April 2014 and recommended that an artisan mill be established in the local area to produce flours from locally grown grains and pulses.
See the project case study at Scottish National Rural Network website.
